pLuxury travel company Belmond's Venice Simplon-Orient-Express won't just be plying passengers across France on the usual route; it will, in fact, offer a ride through nostalgia with this new project. Michelin-Star chef and director of Le Grand Vefour Restaurant in Paris, Guy Martin, will introduce a gourmet menu that is healthy and light. His specialty dishes that are easy on the palate and stomach will blend beautifully with the opulent art-deco carriages of the train./p pandnbsp;/p
pChef Martin gives traditional dishes a contemporary edge using fresh, light and interesting ingredients. The dishes include John Dory fillet served with celeriac purandeacute;e, cumin-infused zucchini or lobster medallions served on a bed of gnocchi and Oscietre Caviar. The elaborate menu will also serve Charolais of Beef paired with truffle, broccoli purandeacute;e and hazelnut oil, which is the signature dish of Oriental Express' Executive Head Chef Bodiguel./p
